Peanut Butter Cookies

Usually after I make cookies or brownies I will bag them and put them in the freezer so they will stay fresh. However with these cookies, they barely make it into the freezer. We like peanut butter cookies, however some peanut butter cookies are a little to heavy on the peanut butter and they are to over powering. These however are perfect and it is a super simple recipe too. I got this recipe out of a local cookbook called Susie's Cook Book. Check out what else people are cooking this week HERE

Peanut Butter Chocolate Chip Cookies
I actually ususally don't make them with the chocolate chips and the last couple of times that I made them, I used sunflower butter and they have turned out good as well.

2 cups AP Flour
1 1/2 cups granulated sugar
1/2 cup butter/margarine, softened
1/2 cup peanut butter
2 eggs
1 tsp. baking soda
1 tsp salt
1 tsp vanilla
1 TBsp water
optional - 1 cup mini chocolate chips

Blend all ingredients except chocolate chips. Beat 2 minutes on medium speed. Stir in chocolate chips. Place rounded cookie on greased cookie sheet. Bake at 350 degrees for 12-15 mintues. Yields 6 1/2 dozen

  1. Thanks for commenting on my blog! Oh my goodness I've never attempted bread. You know, I'm a good cook but not a good baker! Even my cookies don't turn out that great. I want to make some m&m chocolate chip for my sugar-tooth boys, but I'm afraid they'll turn out bad. Any EASY recipes you want to throw my way would be greatly appreciated!!! :)

Meal Plan Monday - 3/16/09

There is a switcharue this week. Erin over at $5 dinners is hosting this week. You can check out everyone else's great meal plans and see what is cooking around town. So last week was a crazy one for us. Daddy and I both got a stomach flu and then at the end of the week and this whole weekend, we took on a DIY project of redoing our flooring in our foyer. I will post pics later this week. So there are alot of repeats on the menu this week do to the craziness of last week. Oh and I don't have anything listed for what I am packing for Sassy's lunches because school hasn't put up the new menu yet for the week. Meal Plan Monday

As you may have noticed you didn't hear much out of me this week... Well, every single person in this house came down with some verison of a nasty respiratory cold. Sassy ended up with a sinus infection that started pushing out her eyes...ewwww. Daddy still has a cough and is running fevers for the last week (I am sending him to the Dr's tomorrow to be checked out.) Thankful I didn't get hit that bad and was only down for 2 days. But as all of you moms know 2 days is like 2 weeks in other people's world. So I have spent most of my waking time, catching up, scrubbing the house down and washing everything that could be washed just to rid ourselves of these germs. Thankfully here on the East coast it was relatively warm today so I was able to air out the house as well. Needless to say we didn't have a 2nd birthday party for Sassy this past weekend, so I have rescheduled it for next weekend and we will hope everyone is better by then.
