Meal Plan Monday

This past week has been a real roller coaster. We had Sassy's food challenge on Monday. She did not show and immediate signs of a returning milk allergy. So they sent us home and told us to start increasing her milk intake daily and see how she does. Well Tuesday, Wednesday were great. Thursday she had a "hive" on her face for about 30 min then it disappeared. Friday was fine. Saturday, we went down to my mom's to work on our garden (pictures coming soon) and she developed 3 "hives" not sure if they were hives or bug bites and had a rash over her neck and back, could have been heat rash it was like 89 degrees here, the heat rash eventually diminished. Then Sunday we toured a local farm and had a great time. After Sassy got up from her nap she had a "heat rash" again and had several hives that kept appearing and disappearing all over her arms, face and legs. They would be here and gone with in 30 min. WERID!! So at this point I have NO CLUE what is going on with her little body. If anyone has ever experienced this before, I am all ears!

On the menu front, Daddy decided that last week he didn't want tacos so we had steak on the grill instead, which changed up the whole menu for the week, and with all that was happening on Saturday with the garden install, I forgot to take the chicken out of the freezer. So all of these things are making their way back on the menu again this week.

Monday : Hamburgers, Whole Wheat Rolls, French Fries & Salad

Tuesday: Salmon, Pea, Salad

Wednesday: Soft Tacos with Beef, Black Beans, Tomatoes, Cheese, Sour Cream

Thursday: Oven-Fried Chicken Tenders, Homemade Fries

Friday: Hamburger Barley Stew, Salad

Saturday: Super nachos made with refried beans, black beans, lettuce, tomato &, sour cream

Sunday: Chicken on the Rotisserie Gravy, Corn, Mashed Potatoes

Grocery Shopping

So I have been reading the Grocery Cart Challenge for several weeks now and I have been thinking if she can feed a family of 6 on $60 a week, then I can do it for 3 on $30. Then I started really thinking about it... With DD's milk allergy, I purchase high end vegan subsitutes for her like vegan cheese, sour cream, soy milk, etc. These things are expensive, but I don't want her to miss out on things like having tacos, and lasagna. So we will have to sacrfice in other areas to make up for that. So I have set our weekly grand total for $40, if I can get it close to $30 even better. But $40, is our max. So here is our weekly trip. Sorry I don't have a picture to post with this one. Giant 8 o'clock coffee $2.25 (on sale) Fels Napa Soap $0.99 Washing Soda $2.37 Giant brand whole wheat hamburger rolls $2.49 Giant ...

Meal Plan Monday

As you may have noticed you didn't hear much out of me this week... Well, every single person in this house came down with some verison of a nasty respiratory cold. Sassy ended up with a sinus infection that started pushing out her eyes...ewwww. Daddy still has a cough and is running fevers for the last week (I am sending him to the Dr's tomorrow to be checked out.) Thankful I didn't get hit that bad and was only down for 2 days. But as all of you moms know 2 days is like 2 weeks in other people's world. So I have spent most of my waking time, catching up, scrubbing the house down and washing everything that could be washed just to rid ourselves of these germs. Thankfully here on the East coast it was relatively warm today so I was able to air out the house as well. Needless to say we didn't have a 2nd birthday party for Sassy this past weekend, so I have rescheduled it for next weekend and we will hope everyone is better by then. This is my hope/goal for a meal pla...
